Vine Ripened Tomato Soup
Ingredients:-
Tomatoes stewed | 500 gms |
Flour | 1 tsp |
Onion, sliced | 1 |
Celery, chopped | 1 stalk |
Boiling water | 500 ml |
Butter | 1 tsp |
Sugar | 1 tsp |
Paprika | 1/4 tsp |
Pepper | 1/4 tsp |
Salt | to taste |
Croutons and fresh cream to garnish |
Preparation:-
1) Simmer tomatoes, onion and celery for 20 mins.
2) Pass through a sieve then pour boiling water through the sieve into mixture.
3) Mix butter and flour to make beurre maine; add to soup and whisk till it thickens.
4) Add remaining ingredients and combine thoroughly.
5) Garnish with croutons and a whirl of cream and serve.
